Winter Bliss: Gajar ka Halwa

Gajar ka halwa, renowned for its rich taste and creamy texture, is a beloved dessert deeply rooted in Indian culinary traditions. This iconic sweet dish derives its charm from the slow cooking process that brings out the natural sweetness of grated carrots.


1 kg carrot
¼ cup Vashishti A2 Cow Ghee / clarified butter
10 Vashishti Whole Cashew / Kaju, chopped
10 almonds/badam, chopped
3 cups of milk
¾ cup sugar
½ cup khoya / mawa
¼ tsp cardamom powder



🥕 Firstly, peel and finely grate the carrot, setting it aside, Traditionally, Delhi carrot is used to prepare halwa.

🍯 In a large kadai, heat ¼ cup Vashishti A2 Cow Ghee and fry 10 Vashishti Whole Cashews, 10 Almonds until golden brown, Keep it aside.

🔥 In the same Vashishti A2 Cow Ghee, add grated carrot and sauté well, Sauté for 5 minutes or until it changes color slightly.

🥛 Now pour 3 cups of milk and give it a good stir. Boil for 10 minutes, stirring occasionally, and continue to boil until the carrots are cooked well and the milk reduces.
🍚 Once the milk thickens completely, add ¾ cup sugar, mix well, and cook until the sugar dissolves and thickens.

🍮 Cook until the halwa thickens, and ghee releases from the sides.

🌟 Now turn off the flame and add ½ cup khoya, ¼ tsp cardamom powder, and fried nuts, Mix everything well.
