Vashishti Bliss: Nutty Barnyard Millet Delight

Barnyard Millet, also known as Samvat ke Chawal, is a popular grain used during Navratri festivals. It boasts a low carbohydrate content yet offers comparable energy levels to other millets. Rich in fiber and a reliable source of B-complex vitamins, it's a nutritious choice for any meal.

Ingredients:

1 cup Barnyard Millet

3 to 4 tbsp Jaggery Powder

500gm Boiled Milk

1 tsp Elaichi Powder

1/2 cup Vashishti Cashew and Almond Powder

4 to 5 Saffron Sticks

2 to 3 tbsp Vashishti A2 cow Ghee

 

Instructions:

1. Wash and cook the barnyard millet in a pressure cooker for 2 whistles.

2. Heat a pan and add Vashishti A2 cow ghee. Saute the cooked millets in ghee for 2 to 3 minutes.

3. Add boiled milk and mix well.

4. Incorporate the dry fruit powder and mix thoroughly.

5. Boil the mixture for 5 minutes.

6. Add jaggery and continue boiling for an additional 2 minutes.

7. Turn off the heat and serve hot or cold. Enjoy your no-added-sugar millet kheer!
