Ingredients:
For the Chicken Marinade:
1 pound boneless chicken, cut into pieces
1/2 cup plain yogurt
2 tablespoons ghee, melted
1 tablespoon ginger-garlic paste
1 teaspoon ground turmeric
1 teaspoon garam masala
1 teaspoon chili powder
Salt to taste
For the Biryani Rice:
2 cups Basmati rice, soaked for 30 minutes and drained
1 large onion, thinly sliced
1/4 cup ghee
4 cups water
Whole spices (2 bay leaves, 4 cloves, 4 green cardamom pods, 1 cinnamon stick)
Instructions:
🥣 In a bowl, mix all the ingredients for the chicken marinade. Cover and let it marinate in the refrigerator for at least 1 hour.
🍲 In a large pot, heat the ghee over medium heat and sauté the sliced onions until golden brown. Remove half of the onions and set them aside for garnishing.
🌶️ Add the whole spices to the remaining onions in the pot and sauté until fragrant.
🍗 Add the marinated chicken pieces to the pot and cook until they are tender and well-cooked.
🍚 In a separate pot, bring 4 cups of water to a boil. Add the soaked Basmati rice and cook until it is almost done. Drain any excess water.
🫕 Layer the cooked rice over the chicken in the pot, and top it with the reserved sautéed onions.
🥄 Drizzle ghee over the top layer of rice and cover the pot with a tight-fitting lid. Cook on low heat for 20-25 minutes or until the rice is fully cooked and fluffy.
