Kaju Katli, also known as Kaju Barfi, is a popular Indian dessert that has a rich history intertwined with the culinary traditions of India. This delectable sweet, made primarily from cashew nuts, sugar, and ghee, often garnished with silver edible foil, is believed to have originated from the northern regions of India. Particularly, it is thought to have strong ties to the royal kitchens of Rajasthan and Uttar Pradesh, where rich, nut-based sweets are a staple in festive and celebratory cuisine. Over time, Kaju Katli has become beloved across all parts of India and is a quintessential treat during festivals like Diwali.
Ingredients:
• 1 cup Vashishti Crunchy Cashews
• 1/2 cup sugar
• 1/4 cup water
1/2 teaspoon cardamom powder (optional)
• 1 teaspoon Vashishti A2 desi ghee (for greasing)
Instructions:
1. Grind Cashews: Grind 1 cup Vashishti Crunchy Cashews into a fine powder.
2. Make Syrup: Boil 1/2 cup sugar and 1/4 cup water until it forms a one-string consistency.
3. Cook Mixture: Add cashew powder to the syrup, cook on low, stirring until thick and dough-like.
4. Cool and Knead: Let it cool slightly, then knead with greased hands until smooth.
5. Roll and Cut: Roll the dough between parchment paper to 1/4-inch thickness, then cut into diamonds.
6. Decorate and Serve: Optionally, add silver foil. Let cool, then serve.
