Vashishti Delight: Creamy Paneer Cashew Curry

Kaju paneer masala is a delectable North Indian curry that combines the richness of cashews with the creaminess of paneer cubes. This unique dish is a creamy gravy-based recipe that pairs perfectly with garlic naan, roti, or chapathi.

Ingredients:

  • 400g Paneer
  • 1 cup Vashishti Cashews
  • 5 tsp Curd
  • 2 Onions
  • 3 Tomatoes
  • 1 tsp Ginger Garlic Paste
  • 1 tsp Kasuri Methi
  • Coriander Leaves (for garnish)
  • 4 tsp Vashishti A2 Cow Ghee
  • 1 tsp Vashishti Honey
  • Oil (for shallow frying)
  • 1/2 tsp Turmeric Powder
  • 1 tsp Red Chili Powder
  • 1 tsp Coriander Powder
  • Salt (to taste)

 

 

Instructions:

  1. Soak Vashishti cashews, blend with curd for paste.
  2. Fry paneer until golden brown.
  3. Heat ghee, add whole spices.
  4. Sauté onions, ginger garlic paste, add tomato puree.
  5. Add spice powders, salt, honey, and cashew paste. Cook.
  6. Add fried paneer, mix.
  7. Finish with kasuri methi, garnish with coriander leaves.
  8. Serve hot with roti or rice.
