Vashishti Bliss: Sweet Puran Poli

A traditional Maharashtrian delicacy perfect for festive occasions. This sweet, lentil-stuffed flatbread, showcased in my step-by-step recipe with photos, is a delightful treat made during Ganesh Chaturthi, Diwali, Holi, or any celebration. While it requires a bit of skill and patience, the delicious results are truly rewarding. As a bonus, this nutritious sweet can even be enjoyed for breakfast.

Ingredients:


For Puran (dal stuffing):
[½ cup chana dal
¼ tsp Vahsihti Turmeric
1 cup water
1 cup sugar / Jaggery 1/4 cup
½ tsp cardamom powder



Instructions:

Puran (Dal Stuffing):
a. Give the chana dal a good rinse and let it soak for around 30 minutes.
b. Cook the soaked dal in a pressure cooker with turmeric and 1 cup of water until it's soft and cozy (about 2-3 whistles).
c. Mash up the dal and in another pan, mix it with sugar or jaggery. Cook on medium heat, stirring, until it thickens up.
d. Sprinkle in that lovely cardamom powder and keep cooking until it's nice and thick, sliding off the sides of the pan.
e. Let the sweet dal stuffing (Puran) cool down.

Poli (Outer Layer):
a. Get your hands into that whole wheat flour and water, kneading until it becomes a soft and huggable dough.
b. Break the dough into little balls.
c. Take a ball, press it down, drop in some of that delicious Puran, seal it up, and roll it into a flat Poli - like a cozy blanket for the filling.
d. Cook it on a griddle with a bit of Vashishti A2 Cow Ghee until it's all warm and golden brown.

Serving:
Serve it up warm, maybe with a little extra ghee or alongside some yogurt. Enjoy your heartwarming Puran Poli!
